Tropical drink in a pineapple

Is the beautiful sunset evoking images of an exotic tropical getaway? Then make your time near the pool  or at the beach even  better with a refreshing drink. Don’t be shy to add tropical fruit such as pineapple, which  is loaded with vitamins. To heighten the mood even more, serve this exotic drink in a hollowed-out pineapple. I love adding vegetables to my drinks to add freshness while  reducing  the  energy  density  (i.e.  the  number  of  calories per  gram  of  food  consumed). With  this  drink,  say  goodbye  to  your  thirst  on  those hot  summer  days. Have  a  great  summer, everyone!

Ingredients:

  • 1 cup Oikos plain Greek yogurt (2% M.F.)
  • 2 cups pineapple, fresh or frozen
  • ½ English cucumber, peeled and seeded 
  • 1 cup coconut water 
  • ½ tsp. fresh ginger, grated
  • 1 tbsp. honey
  • 2 fresh pineapples, hollowed out (optional)

Preparation steps

  • Place all ingredients in a blender and purée until smooth. The texture will be more liquid than that of a smoothie, but thicker than that of a juice.

  • Serve immediately in a tall glass filled with ice or a hollowed-out pineapple.
