  • ¼ cup Protein Greek Yogurt
  • ¼ cup honey or maple syrup
  • 2 tablespoons of water (adjust as needed)
  • 1 teaspoon vanilla extract
  • 1 egg
  • ¼ cup melted coconut oil or unsalted butter
  • ½ cup chocolate chips or dark chocolate chunks
  • ¼ cup chopped macadamia nuts (optional)
Directions
1Preheat the oven – Set your oven to 350°F (175°C) and line a baking sheet with parchment paper or coat it with cooking spray. 2Mix the dry ingredients – In a mixing bowl, whisk together the flour, protein powder, baking soda, and salt until well combined. 3Combine the wet ingredients – In another bowl, mix the Protein Greek Yogurt, honey (or maple syrup), water, vanilla extract, egg, and melted coconut oil. Stir until smooth. 4Form the cookie dough – Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips and macadamia nuts (if using). 5Scoop onto the baking sheet – Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. 6Bake – Place the cookies in the oven and bake for 10-12 minutes, or until the edges are lightly golden. 7Cool and enjoy – Let the cookies rest on the baking sheet for a few minutes before transferring them to a wire rack.
