  • 3 cups (750ml) chopped rotisserie chicken
  • 1-1/2 cups (375ml) Oikos 11% Plain Yogurt
  • 1 cup (250ml) Irresistibles old cheddar cheese trio shredded blend
  • 1 red apple, cored and diced
  • 1/2 cup (125ml) diced celery
  • 1/2 cup (125ml) minced red onion
  • 1/2 cup (125ml) diced pickle
  • 1/4 cup (60ml) pickle brine/juice
  • 1-1/2 tbsp (23ml) Irresistibles Italian Seasoning
  • 1 tbsp (15ml) Selection stone ground dijon
  • 4-5 heads Boston bibb lettuce for serving
  • 1 cup (250ml) quartered cherry tomatoes
  • Pepper to taste

Preparation steps

  • In a large bowl, combine chicken, 11% plain yogurt, cheddar cheese blend, apple, celery, onion, pickle, pickle brine, italian seasoning, and dijon. Spoon about 2 tbsp chicken salad on each lettuce leaf, top with tomatoes and pepper to taste. Keep leftover chicken salad refrigerated for up to 4 days.
