INGREDIENTS:

  • 6-7 large carrots (about 600 g or 1.3 lb.), grated
  • 2.5 mL (½ tsp.) fennel seeds
  • 2.5 mL (½ tsp.) anise seeds
  • 45 mL (3 tbsp.) olive oil
  • 250 mL (1 cup) Oikos plain Greek yogurt (0% m.f.)
  • 60 mL (¼ cup) raisins or currants
  • 5 mL (1 tsp.) salt
  • 5 mL (1 tsp.) pepper

PREPARATION STEPS

1Peel and grate carrots. 2In a mortar, grind fennel and anise seeds with a pestle. 3Add yogurt, raisins, salt, pepper, fennel seeds and anise seeds, and mix well. 4Store in refrigerator until ready to serve.
