Creamy Garlic Mashed Potatoes

This classic comfort food gets an irresistible makeover that stars whole garlic cloves, herbs, and a rich, creamy taste thanks to Oikos Greek Yogurt.

INGREDIENTS:

  • 1 ¼ cups Oikos 11% Plain Greek Yogurt
  • 2 lbs (1kg) russet potatoes, peeled and halved (approx. 4 large)
  • 2 heads of garlic cloves, peeled (20 whole cloves)
  • 1/4 cup chopped fresh chives
  • 1 tsp minced fresh thyme
  • 1 ¼ tsp salt
  • ½ tsp pepper

PREPARATION STEPS

1Place potatoes and garlic in large saucepan; fill with cold water so that potatoes are submerged by at least one inch. Cover and bring to boil; cook until fork tender, about 25 minutes. Drain and return to pot. 2Add yogurt, chives, thyme, salt and pepper. Mash with potato masher until smooth and creamy.
