1Peel the cucumber and then grate it to obtain 1/2 cup of cucumber.
2Dice the onion to ¼ inch pieces and finely chop the cilantro and mint leaves.
3If using green chili(es), cut the chili(es) in half lengthwise and scrape out the seeds. Then, finely dice chili(es) into small pieces.
4In a medium bowl, whisk together yogurt, grated cucumber, red onions, salt, chillies and cilantro. Mix together until well combined.
5Add in chaat masala. You can add additional salt and/or chaat masala to taste.
6Garnish using additional mint leaves, chopped cilantro, and onion.
Note:
7For a runnier texture, add in water or milk 1 tsp at a time until the raita reaches your desired consistency.
8Raita is best consumed within a few hours of making it. If making in advance, prep all the vegetables and garnishes and whisk together immediately before serving.
